What kind of wine is it
Amarone della Valpolicella Mai Dire Mai by Pasqua is a still red wine obtained from a blend of Corvina, Corvinone, and grapes dried with the appassimento method in Valpolicella. It shows structure and complexity, with good aging potential. Fermentation in stainless steel at a controlled temperature and aging in French oak barrels provide a harmonious profile. The wine presents with a bold character, full body, precise tannins, and a notable freshness.
Where does it come from
This Amarone comes from the Montevegro vineyard, at about 350 meters between Val d'Illasi and Val di Mezzane, in the heart of the historical area. The microclimate, featuring marked temperature swings and a continental influence, allows for slow, complete ripening. The calcareous-clay soil ensures good drainage and a mineral signature, giving the territory a distinctive identity.
How is it made
Harvesting is done by hand with careful selection of the bunches. This is followed by a period of appassimento (drying) for about four months in the fruttaio (drying room), then gentle pressing, cold maceration, and fermentation in stainless steel at a controlled temperature. Malolactic fermentation takes place in steel tanks. Maturation continues for twenty-four months in new French oak barrels, and the blend with Rondinella and Oseleta adds even more complexity to the final profile.
Tasting notes
In the glass it takes on an intense ruby red color with garnet highlights. On the nose, ripe cherries, raspberries and blueberries stand out, along with sweet spices, tobacco and aromatic herbs. The palate is broad and enveloping, with blackberries and dark chocolate. The tannic structure is clear and the acidity is well balanced, leading to a long finish with a savory, mineral trail.
Food pairings
This Amarone pairs well with rich red meat dishes such as beef braised in red wine or roasted venison with a sour cherry reduction. Its structure also enhances hard aged cheeses like Parmigiano Reggiano or Pecorino delle Balze Volterrane. For a territorial touch, it can accompany Amarone risotto and it also suits Hungarian goulash or Provençal-style sliced beef.
When to serve it
It is recommended for important occasions or moments of celebration. The wine is enjoyable after just a few years and can achieve its full potential between the fifth and fifteenth year, when stored at 14-16 °C with controlled humidity. The ideal serving temperature is 16-18 °C, using large-bowled glasses to fully appreciate its aromas and structure.
