Description
Asili is the Barbaresco that embodies the historical roots of Ca’ del Baio, coming from one of the most prestigious crus of Langa. The selected Nebbiolo grapes come from vineyards planted in 1967 in the municipality of Barbaresco, in an area characterized by calcareous-sandy marls and a southwest exposure, elements that contribute to the wine's refinement.
The vinification takes place with fermentation on the skins in steel at a controlled temperature for a period varying from 5 to 30 days. The wine then matures for 24 months in wood, partly in large oak barrels and partly in tonneaux, followed by a bottle aging of at least 6 months before commercialization.
It presents a bright garnet red color with orange reflections. On the nose, it releases an intense bouquet of morello cherries and violets, accompanied by spicy notes of black pepper, licorice, and tar. The taste is dry, warm, and soft, with a velvety and persistent finish, rich in elegance and depth.
Perfectly paired with red meats, braised dishes, game or aged cheeses, it also lends itself, with time, to becoming a great meditation wine.
