Description
One of the most important producers in the Barbaresco area, already during the 1950s he vinified the best parcels individually to highlight their true potential. In the wake of this attention to the nuances of the terroir, since 1978 it has been offering the Crichët Pajé label to the market, which still today represents one of the spearheads of the production.
The grapes come from a small parcel cultivated in the highest part of the famous Paje cru, which is located south of the ancient village of Barbaresco. The old vines are grown on soils rich in limestone, in an area with a particularly mild and windy microclimate. Fermentation takes place in wooden vats, with a maceration on the skins for over 2 months. The wine ages in large oak barrels and ages for a long time in the bottle. It is put on sale 10 years after the harvest in a limited number of bottles.
Refined and elegant, it has a ruby color with garnet hues and is distinguished by aromas of dried flowers, licorice root, raspberry and balsamic hints. The sip is harmonious and velvety, of extraordinary elegance.
To be combined with pasta with meat sauce, noble poultry and white meats.
