Description
Sabaudo's Barbaresco is a red wine made entirely from Nebbiolo grapes sourced from four municipalities in the Barbaresco area. This wine expresses the unique characteristics of its region at their best, representing a refined and structured example of the Barbaresco designation. The label depicts Pius IX, pope from 1846 to 1878, who was initially a reformer and later an opponent of Italian unification, and who faced the loss of temporal power with the capture of Rome in 1870.
Vinification involves crushing and destemming followed by fermentation in stainless steel tanks with temperature control at 28°-30°C. Maceration on the skins lasts 12 days with daily pump-overs. Malolactic fermentation is carried out completely. The wine is aged for a minimum of 26 months, including at least 9 months in wooden barrels.
This Barbaresco stands out for its ethereal bouquet with balsamic notes. On the palate, it is elegant and persistent, with an excellent structure that enhances the complexity of Nebbiolo. Its elegance and depth make it a wine of great allure.
Ideal paired with dishes such as pheasant, pigeon, roast turkey, ossobuco, and aged cheeses.
