Description
The Barbera d’Alba Paolina is a wine produced by Ca’ del Baio from grapes grown in various vineyards with South/East, South/West, and West exposures, on medium-textured calcareous soil with sandy components. It presents itself as a fresh and pleasant wine, combining the typical liveliness of Barbera with greater roundness obtained through aging in wood.
The winemaking process involves a phase of maceration and alcoholic fermentation in steel tanks at controlled temperature for about 7-10 days, followed by malolactic fermentation. Subsequently, the wine matures for 12 months in large oak barrels and ages in the bottle for at least 3 months before being released to the market.
Visually, it presents an intense ruby red color with violet reflections. The aroma is vinous and intensely fruity, with pleasant hints of currant and raspberry. On the palate, it is fresh and vibrant, velvety in consistency, rich in body, with a long-lasting finish.
It is ideal to accompany the more flavorful dishes of Piedmontese cuisine such as boiled meat and bagna càuda, and also pairs perfectly with cold cuts, stewed meats, and medium-aged fatty cheeses.
