What kind of wine is it?
Costamiòle di Prunotto is a structured red wine made from Barbera grapes, produced in Piedmont in the Nizza area. The vinification involves fermentation with maceration at controlled temperature and the completion of malolactic fermentation in new French oak barriques. Ageing continues in the same barrels and then in the bottle, resulting in a full, dense, and elegant style. This profile naturally expresses the terroir and features soft, well-integrated tannins.
Where does it come from?
This wine comes from the eponymous vineyard of the Prunotto estate, in the municipality of Agliano Terme, located in the province of Asti. The Nizza denomination identifies an area in Piedmont historically dedicated to Barbera cultivation, characterized by hills and slopes that help achieve optimal ripening of the grapes. The strategic location places the vineyard in the heart of a region renowned for producing reds with great structure and depth. The specific origin of the vineyard gives this Riserva a clear identity.
How is it produced?
The Barbera clusters are harvested and carefully selected by hand. Fermentation takes place with a fifteen-day maceration phase at controlled temperature, to optimally extract color and polyphenolic components. After malolactic fermentation, completed in new French oak barriques from Allier, the wine matures for twelve months in barrique. This is followed by a further period of rest in the bottle, a fundamental step in achieving balance between the fruitiness and the contribution of the wood.
Tasting notes
In the glass, it displays a garnet red color, enhanced by purple and black highlights that underline its concentration. The nose develops a wide and multifaceted aromatic bouquet, dominated by plum and cherry notes, accompanied by hints of violet, cinnamon, cocoa, and leather. On the palate, it is dense and enveloping, supported by a compact and continuous texture. The soft tannins fit perfectly within the structure, offering an overall sense of harmony and coherence with its maturation journey.
Food pairings
It pairs excellently with roast meats and game, where the density of the sip balances the succulence and aromatic intensity of the dish. It is also suitable to accompany aged cheeses, thanks to the soft tannic texture and spicy notes that complement the complexity of maturation. In traditional Piedmontese cuisine, it is a natural match for braised meats and achieves a solid balance between the fruity notes and the consistency of slow-cooked meats.
When to serve it
An ideal red wine for occasions when an important structure is sought, capable of supporting rich and intense-flavored menus.
