Description
This Barolo originated from the Cru Baudana, near Serralunga d'Alba, but was born from something even further: it derives, in fact, from the nickname that was attributed to Domenico Clerico by his father. The dialectal expression Areoplan Servaj means "wild airplane" and well embody the dreamer and enterprising spirit that has always guided Cleric's hand.
The Nebbiolo vines, with an average age of 25 years, grow on clayey soil, at an altitude of 320 - 350 meters above sea level. After fermentation in steel containers, the wine ages for 24 months in barrique. A further 2 years of aging in the bottle makes the wine ready for marketing.
In the glass it is garnet red in color. Scents of red fruits and withered flowers introduce the bouquet, which subsequently opens with spicy and slightly balsamic traces. In the mouth it is defined by vigor and intensity, always managed in a highly refined gustatory finesse.
To be combined with a donkey stew.
