Description
Domenico Clerico's Barolo Ciabot Mentin takes its name from the vineyard where it originates, located inside the Cru Ginestra near Monforte d'Alba.
Ciabot Mentin is located at 440 meters above sea level and has a mainly clayey soil. The vines, exposed to the east, were planted in 1981, thus approaching 40 years of age. Refine in barriques for 16 months, after which the assembly of the best lots takes place. Once combined, they age for another 16 months in large barrels and end their journey with 2 years in the bottle.
At the sight it is garnet red, with a luminous transparency to suggest the noble origin. Red fruit and dark fruit are marked in clear syllables, on the nose, and are followed by notes of licorice, violet, leather and a light spicy texture. In the mouth it is firm, robust and with marked tannins. Linear freshness is inserted on a full body full of character. It persists in a long complex trail.
Excellent to combine with a Rossini fillet.
