Description
The Barolo Mirau by Negretti is made exclusively with Nebbiolo grapes from the MGA Bettolotti, located in the municipality of La Morra, in vineyards facing southeast at an altitude ranging between 230 and 270 meters above sea level. The soil in this area is characterized by a marl, limestone, and sandy composition, which significantly contributes to the wine's identity.
The vinification process involves fermentation in contact with the skins for about 25-30 days in stainless steel at a controlled temperature between 27°C and 31°C, followed by spontaneous malolactic fermentation. It is then aged for 24 months in Swiss oak barrels, a crucial step for the development of the elegance and structure typical of this Barolo.
In appearance, it shows violet reflections merging into amber tones. On the nose, complex notes of turmeric, black licorice, and sandalwood emerge, enriched by exotic spices and dark berries. On the palate, sensations of plum and oriental spices alternate with an incense-like finish, accompanied by an important and well-balanced tannic structure.
Perfect paired with dishes based on red meat, braised or game.
