Description
Ferdinando Principiano's Barolo Serralunga comes to life in that hemisphere of the Piedmontese Langa famous for giving Baroli played on the powerful and intense stretch.
To be precise, the Nebbiolo grapes are harvested from the owned vineyards located in the municipality of Serralunga d'Alba. The viticulture and winemaking practices remain so faithful to tradition that even the pressing of the grapes during the harvest is done with the feet. Once the must is obtained, this spontaneously triggers alcoholic fermentation thanks to the action of indigenous yeasts naturally present on the skins. It follows an aging in barrels of 20 and 40 hectoliters which has a minimum duration of 24 months.
Its color is garnet red, with excellent brilliance. The bouquet denotes a complexity that introduces the red fruit and rose petals, to then leave ample space for licorice, spices and mint. In the mouth it affirms the tannin which, however, is well managed and integrated with the other components of freshness and softness.
Ideal in combination with a roast pigeon breast with cherry compote.
