Description
The Grand Cardinal from the Bonpas estate is a red wine obtained from Grenache and Syrah grapes grown on the southern slopes of Mont Ventoux, in the French region of Vaucluse, located in the heart of the Rhône Valley, near Avignon. The name of the estate derives from "Bon passage," referring to the safe crossing of the Durance River that once connected Rome to Avignon.
During vinification, only the Syrah grapes are destemmed, while the Grenache grapes remain with their stems, allowing a controlled temperature fermentation around 25°C. The extraction techniques are delicate: the cap of grape skins is quickly submerged to favor a natural infusion that allows for fine, well-integrated tannins, also imparting a pleasant minerality.
In appearance, it shows a crimson color veined with deep purple. The nose offers delicate and subtle aromas, with a mix of red fruits and white pepper. On the palate, it stands out for its marked minerality that enhances the fresh notes of fruit, with a long and complex finish enriched by hints of Provençal herbs and light spicy nuances consistent with the bouquet.
Ideal in combination with meats, lamb stews, and aged cheeses.
