Description
The Bolgheri Rosso Pievi is the first wine produced by Fabio Motta and originates from a single vineyard that authentically expresses the character of the denomination. The balanced blend of Merlot, Cabernet Sauvignon, Sangiovese, and a small percentage of Syrah results in a fruity, harmonious, and versatile wine, perfect to be appreciated already in its youth.
The grapes, harvested at the right degree of ripeness, are spontaneously fermented with natural yeasts in cement vats. During fermentation, the cap is manually submerged, and each variety ferments separately for about two weeks. After malolactic fermentation, the wines are blended and aged for a year in unlined cement vats, followed by at least six months in the bottle.
In the glass, it expresses itself with clear and juicy fruit, where the softness of the Merlot meets the structure of the Cabernet Sauvignon and the liveliness of the Sangiovese. On the palate, it is fresh and smooth, with a good texture and a balanced and persistent finish.
It pairs well with roast meat dishes, rich sauce first courses, or medium-aged cheeses.
