Description
This Bourgogne Chardonnay from Labouré-Roi is obtained from grapes grown in numerous villages in Burgundy, between the Yonne, the Côte d'Or, the Saône-et-Loire, and the Rhône. The limestone soils, influenced by marl and Kimmeridgian limestone, give the wine freshness, minerality, and structure. The blend comes from multiple areas, combining the liveliness of northern wines, the roundness of the Mâconnais and Côte Chalonnaise, and the complexity of the Côte d'Or, in a perfect balance of Burgundian terroirs.
Vinification takes place in stainless steel vats at controlled temperature, with fermentation at 16-18°C to preserve the aromatic potential. Aging occurs for 20% in oak barrels and for 80% in stainless steel, with a stay on fine lees for 6-8 months. Malolactic fermentation is completed to increase the roundness of the wine. The final blend ensures elegance, freshness, and a slight woody note.
In appearance, it is golden white with emerald reflections, clear and bright. The nose offers a straightforward bouquet with notes of citrus and white-fleshed fruit, accompanied by a slight minerality. On the palate, it reveals itself velvety, pleasant, with good integrated acidity, elegant structure, and a balanced and savory finish.
It pairs excellently with warm Comté cheese pie, poultry salads, fresh pasta, pig's trotters, pâté en croûte, or fried fish.
