Description
Produced by Chanterêves, a Burgundy company founded in 2010 by Tomoko Kuriyama and Guillaume Bott, this Chardonnay represents a modern and authentic expression of the Côte-d'Or. Thanks to Guillaume's local roots, Chanterêves accesses parcels of excellence, which are hard to reach for other emerging traders, offering refined and sought-after wines.
After a gentle pressing of about six hours, the alcoholic fermentation starts spontaneously, without the inoculation of selected yeasts. The wine is then aged for 12 months in oak barrels of various sizes, respecting the identity of the grape variety and maintaining a harmonious and dynamic structure. The practices in the winery are minimally interventionist, in order to promote a pure and direct expression of the fruit and soil.
On the nose, it opens with citrus aromas, including lime and orange peel, accompanied by floral touches and a light note of flint. On the palate, it is energetic and tense, with a saline texture that enhances its freshness and provides great persistence. The sip is precise, vertical, and satisfying, showing both depth and finesse.
Perfect when paired with raw seafood or grilled fish, where the salinity and energy of the wine enhance the purity of the flavors.
