Description
The Bourgogne Chardonnay Vieilles Vignes from Labouré-Roi is produced from over 45-year-old vines, primarily cultivated in the southern part of the Côte Chalonnaise and the north of the Mâconnais. These historic vineyards, with limited yields and deep roots, allow for a superior concentration and a greater expression of the terroir. The calcareous and clay soil enriches the wine's aromatic profile with complexity and freshness.
The manual harvest is followed by gentle pressing, cold settling, and low-temperature fermentation in stainless steel tanks. Aging occurs 80% in steel on fine lees and 20% in oak barrels, half of which are new. This process achieves a balance between minerality, structure, and woody elegance, enhancing the character of the old vineyard.
The color is golden white with emerald reflections, clear and bright. On the nose, it presents citrus notes, mineral touches, and a slight woody nuance. On the palate, it is fresh, finely woody, and well-structured, with a balanced acidity that gives vitality and a persistent finish with fruity aromas and hints of vanilla.
Ideal with cheese quiches, poultry salads, fresh pasta, pig's trotters, pâté en croute, or fish and chips.
