Description
The Bourgogne Pinot Noir Vieilli en Fût de Chêne by Labouré-Roi is made from a blend of grapes from the Côte Chalonnaise, the Côte de Beaune, and the Auxerrois area, combining roundness, fruit, and freshness. The soils range from limestone-clay and Kimmeridgian to clay marls and limestone with traces of granite. This wine represents the essence of Burgundian Pinot Noir, with an elegant and authentic style, typical of the Maison of Nuits-Saint-Georges.
After careful selection in the vineyard and in the cellar, the grapes are destemmed and placed in temperature-controlled vats for a cold maceration of 4-5 days at 8-10°C. This is followed by alcoholic fermentation with daily pump-overs and punching down for 15 days. The wine matures for six months, half in stainless steel tanks and half in barrels, some of which are new, developing aromatic complexity and a delicate woody note.
Visually, it displays a bright ruby red color. On the nose, it offers a bouquet rich with strawberry, cherry, blackcurrant, and blueberry, enriched by subtle woody notes. On the palate, it is fresh, balanced, with good structure, refined fruity aromas, and a spicy vein that adds elegance and persistence.
It is perfect with cold cuts, tuna tataki, pasta, savory pies, pâté en croûte, coq au vin, braised beef, or cheeses like Camembert.
