This is followed by a long maturation in Slavonian oak casks and a period of rest in the bottle, resulting in a complex and harmonious profile.
Where does it come from
This wine is born in the southern area of Montalcino, in the Pianrosso vineyard, where the hillside exposure and temperature swings favor complete ripening of the grapes. The soils are medium-textured with the presence of eocene galestro, a matrix that ensures drainage and limits water excess. The Mediterranean climate with constant ventilation and moderate rainfall protects the health of the grapes and gives the wine its characteristic tannic imprint.
How is it produced
The grapes are harvested with careful selection to preserve the integrity of the Sangiovese. After de-stemming, fermentation occurs in stainless steel and glass-lined concrete vats with temperature control and maceration on the skins to extract color and aromas. The wine continues with a long aging period in Slavonian oak casks for over three years, followed by at least twelve months of bottle age to achieve balance and complexity.
Tasting notes
In the glass it shows an intense ruby red color with garnet reflections, a sign of aging and structure. The bouquet is broad and complex, with notes of ripe red fruit, cherry, plum, sweet spices, and a subtle ethereal quality that grows with oxygenation. On the palate it is warm and full, supported by vibrant acidity and well-integrated tannins. The compact texture and long finish offer persistent spicy and fruity notes.
Pairings
It pairs well with structured dishes such as roasted game, furred game, and well-aged cheeses, where tannin and structure balance aromatic richness. In Tuscany it is served with meat dishes and intense sauces, while in classic Italian cuisine it matches well with braised meats and slow-cooked dishes. A traditional pairing is stewed wild boar, which highlights persistence and structure, also suitable as a meditative wine.
When to serve it
Ideal for important lunches and formal dinners, it shines when properly decanted before serving. Serve at about 18 °C in a large glass to allow the bouquet to open and the tannins to soften. Thanks to aging in large casks and its solid acidic and phenolic structure, it can be enjoyed immediately or left to evolve for a long time in the cellar, maintaining its expressiveness even after many years.
