Description
Brunello di Montalcino Campinovi is born on the vineyards around the town of Montalcino, which are located at 400 meters above sea level
The Sangiovese grapes are harvested manually during the first week of October. After de-stemming, alcoholic fermentation takes place in stainless steel at a controlled temperature of 28-30 ° C, while maceration on the skins takes about 25 days. Following the malolactic fermentation, the wine ages in large barrels for 36 months, before being bottled in spring. The wine is finally refined in the bottle for 12 months before being placed on the market.
In the glass the wine appears bright ruby red with garnet hues. The nose offers characteristic hints of violets, cherries and berries. The sip is structured and elegant, with velvety tannins and mineral hints typical of the area in which it is born.
To combine with important dishes of red meat and game, from roasts, to braised meats, to stewed wild boar.
