Spontaneous fermentation with native yeasts and a long maceration on the skins contribute to a defined structure and a present tannic texture, supported by a profile that combines fruity and balsamic notes.

This wine is born from vineyards located in Canalicchio, in the Montalcino area. The project bears the signature of Giuseppe Gorelli, winemaker and consultant who founded his own winery in Montalcino, with the aim of interpreting the local Sangiovese through a concrete and coherent reading with the identity of Brunello di Montalcino.
How it is produced
The grapes are vinified with spontaneous fermentation by native yeasts and a maceration on the skins for 40–45 days, which helps extract color and phenolic components. Vinification takes place in Slavonian oak barrels; aging continues for a long period in French barrels and various sizes of Slavonian oak, to integrate structure and aromatic profile over time.
Tasting notes
In the glass, it shows a ruby red color. On the nose, aromas of red fruit and cherry emerge, accompanied by balsamic notes that complete the profile. The palate is juicy and broad, with a steady progression and a long, persistent finish, maintaining continuity between nose and taste.
Pairings
At the table, it pairs well with dishes based on red meats and game, where structure and persistence support intense cooking and concentrated flavors. The tannic texture and juiciness of the sip help maintain balance even with rich dishes.
