Description
The Brunello di Montalcino Pomona is the iconic cru of Villa Poggio Salvi, the result of a parcel selection started in 2010 within the 20-hectare estate. The vineyard from which it originates is located at an altitude of 450 meters, on large-textured galestro soils with a southwest exposure, cultivated with Sangiovese grosso trained in spur cordon.
Vinification involves a cold pre-maceration for 8 days at 12°C, followed by fermentation in steel at 28°C with automatic piston pump-overs. The wine ages for 30 months in Slavonian oak barrels, followed by at least 4 months in bottle before commercialization.
In the glass, it presents a bright ruby red color. The aroma is broad and harmonious, with intense notes of red fruit and spices. The palate is complex and enveloping, with elegant and well-integrated tannins that promise a long aging potential.
It pairs beautifully with grilled meats, game, aged cheeses, and dishes based on truffle.
