Description
Rabissi's Brunello di Montalcino is a Tuscan red wine of great elegance and structure, exclusively produced with Sangiovese grapes grown in vineyards located in Castelnuovo dell'Abate, in the heart of Montalcino. The vineyards, trained on a cordon spur, are situated between 200 and 300 meters above sea level on predominantly clay soils, and are managed with methods that enhance the grape quality through manual harvesting and careful selection of the clusters.
The vinification involves red fermentation at controlled temperatures between 26 and 28°C, with maceration on the skins to best extract the aromatic and structural components. After an initial rest in steel, the wine matures for at least two years in tonneaux and oak barrels, followed by further aging in the bottle, as required by regulations. This slow and meticulous process allows the wine to develop complexity, depth, and harmony.
In appearance, it displays an intense ruby red color enriched with garnet reflections. The nose detects aromas of ripe fruit and jam, followed by spicy notes and light toasting. On the palate, it is enveloping, warm, and persistent, with well-present tannins that are elegant, supported by a solid structure that provides balance and longevity.
It is perfect paired with grilled red meats, aged cheeses, and game dishes with intense flavors.
