Description
What kind of wine is it?
1758 Selección – Gruta Volcánica by Encomienda De Cervera is a full-bodied and structured red wine, made from Syrah, Graciano, and Cabernet Sauvignon grapes grown in the volcanic region of Campo de Calatrava. The profile is complex and bold, with an elegant texture and good aging potential. The wine matures for eighteen months in a natural volcanic cave, which protects the wines from electromagnetic and environmental contamination, enhancing both color intensity and aromatic richness. This process results in soft tannins and a persistent finish.
Where does it come from?
It originates in Campo de Calatrava, Spain. The vineyards are located along the Jabalón River, on clay and stony soils of volcanic origin. The volcanic soil structure imparts a distinctive territorial character and enhances the wine’s minerality.
How is it produced?
The wine is made from Syrah, Graciano, and Cabernet Sauvignon grapes. Aging continues for eighteen months in a natural volcanic cave. The cave ensures stable temperature and humidity and protects the wine from external agents. Cellar practices avoid aggressive filtration, preserving the wine’s purity.
Tasting notes
The color is deep ruby red with violet hues. The nose reveals ripe red fruits, cherry and plum jam, with spicy notes of vanilla, toffee, and toasted hints. The palate offers full structure, smooth tannins, and a savory texture that adds vibrancy.
What does it pair with?
1758 Selección – Gruta Volcánica pairs with mature meats and roast dishes, as well as aged hard cheeses. Its structure and soft tannins also make it suitable with spicy dishes and oven-baked gratins.
When to serve it?
It is recommended to serve in large glasses to enhance the bouquet. Cave aging allows immediate enjoyment, but the wine expresses itself best after a few more years in the bottle. Ideal for formal occasions and refined dinners, it can be opened a few hours before to promote aeration and full aromatic expression.
