Description
What kind of wine this is
1758 Selección – Gruta Volcánica from Encomienda De Cervera is a red wine with a structured and complex profile, made from Syrah, Graciano and Cabernet Sauvignon grapes grown in the heart of Campo de Calatrava. The twelve months’ aging in a natural cave on the estate helps define the wine’s character, giving it body and well-defined tannins. The volcanic terroir adds authenticity to its style, and this wine is suitable for prolonged evolution in the bottle.
Where it comes from
Produced in the Macizo Volcánico area of Campo de Calatrava, near Almagro, the wine comes from clayey, stony, mineral-rich soils of volcanic origin, which are well drained. These elements emerge in the wine’s depth and complexity.
How it is made
Production includes twelve months’ aging in a natural cave inside the volcano, free from electromagnetic interferences. This unique environment favors a slow evolution and contributes to color intensity and aromatic complexity.
Tasting notes
In appearance, the wine displays a deep purple red color with violet reflections. The nose reveals cooked red fruit, blackberry and plum aromas, enriched by notes of vanilla, cocoa and toffee—thanks to the cave aging. The palate is enveloping and powerful, with ripe tannins and a full structure. Balanced acidity supports a long, spicy finish, and the evolution in the mouth reveals harmony among all its components.
Food pairings
This wine pairs well with matured red meats and roast dishes, and is also great with aged cheeses. Its assertive structure and aromatic richness support full-bodied sauces and sweet spices, and its sip brings balance and character to every course.
When to serve
It is recommended to serve this wine in large, thin-walled glasses to best appreciate its bouquet. Ready after a few months from bottling, it shows its best after aging in the bottle. Suitable for cellar aging, it retains a good balance of fruit, structure and minerality over time.
