Description
The 1758 Selección – Gruta Volcánica by Encomienda De Cervera is the result of selecting Syrah, Graciano, and Cabernet Sauvignon grapes grown in the heart of the Volcanic Massif of the Campo de Calatrava. This red wine expresses the authenticity of a unique terroir, characterized by clayey and stony soils of volcanic origin, close to the Jabalón river, in the territory of Almagro, Spain.
The aging process takes place over twelve months in an extraordinary environment: a natural cave inside a volcano located on the estate, specially adapted to isolate the wine from electromagnetic and environmental contaminations. This exclusive method enhances the wine's organoleptic characteristics, ensuring greater color intensity and aromatic richness.
Visually, it presents a deep and vibrant color with purplish hues. The aromatic profile opens with notes of cooked fruit, followed by lactic nuances, vanilla, and delicate traces of toffee. On the palate, it is powerful and enveloping, with great personality and a full, velvety sensation.
Perfectly paired with mature meats and roasted dishes, to which it brings elegance and structure.
