Valle del Maule DO Casillero del Diablo Sauvignon Late Harvest Private Reserve 2011 Concha y Toro
Description
The Late Harvest Casillero del Diablo by Concha y Toro is born in vineyards located in the heart of the Maipo Valley, in Chile.
It is mainly produced with Sauvignon Blanc grapes and with Riesling and Gewürztraminer grapes, coming from the last harvest, which in Chile takes place in the months of May and June, once the bunches have been attacked by the noble rot Botrytis Cinerea. After traditional fermentation in steel at a controlled temperature, the wine ages in the same containers for 24 months, before being bottled.
The Late Harvest by Concha y Toro is characterized by a golden yellow color, with amber reflections. The nose opens with hints of ripe fruit, peaches and papaya, enriched by a pleasant note of honey. On the palate it is pleasantly complex, sweet.
Perfect to accompany dry pastries, this dessert wine is ideal in combination with aged, blue and spicy cheeses.
