Description
El Galayo Blanco is a skin-macerated white wine produced by Sociedad Agraria de Viticultores de Cebreros in the Sierra de Gredos, from high-altitude bush-trained Albillo Real vines grown on granite and schist soils. This wine expresses the soul of an extreme and unique landscape, with limited yields, representing a modern and identity-driven vision of a historic territory, combining expressive power with respect for local viticultural tradition.
The winemaking process includes manual harvesting in crates, followed by grape cooling before destemming. Fermentation takes place with the skins in cement vats, with maceration and alcoholic fermentation lasting 30 days. After racking, the wine is aged for 3 months on fine lees, also in cement, thus preserving structure, complexity, and freshness.
Visually, it presents a bright amber-yellow color. On the nose, it reveals intense and complex aromas of white flowers, stone fruit, and light notes of dried fruit. On the palate, it boasts a full body and a creamy, oily texture that accompanies an elegant sip full of personality, with a long and articulate finish.
Perfectly paired with spicy white meats or ethnic dishes based on fermented vegetables.
