Description
The Chablis 1er Cru Les Forêts by Patrick Piuze comes from a single vineyard over 70 years old, located on the left banks of the Serein River, facing southwest, on a Kimmeridgian limestone soil with a clay component that provides high sapidity and minerality.
The vinification is entrusted to indigenous yeasts, with fermentation and maturation entirely in used barrels, without any clarification or filtration, to enhance the purity of the terroir and reflect Piuze's natural style.
It appears bright straw yellow; on the nose, it reveals citrus (grapefruit, lime), white peach, verbena, flint, and beeswax, with a saline complexity that amplifies depth and intensity. On the palate, it is full, vibrant, with gustatory tension, a crisp acidity, and a long, mineral, and coherent finish.
Perfect with shellfish, fatty fish, or mollusks in delicate preparations.
