Description
The Chablis Premier Cru Montmains from Maison Ropiteau Frères comes from a 37-hectare area on the left bank of the Serein River, in the commune of Chablis. The vineyards are located on a low-altitude hill, and the grapes come from plots with marl-limestone profiles and more stony soils, which give the wine great aromatic complexity and structure.
After cold clarification, the must ferments using indigenous yeasts. 30% of the wine is vinified in used oak barrels, while the remaining 70% in temperature-controlled steel vats. Malolactic fermentation is deliberately blocked to preserve freshness and tension. The wine then ages for several months on fine lees, enriching in volume and depth.
In appearance, it is gold with green highlights. The nose is exotic and floral, with hints of citrus and resinous aromas. On the palate, it is full and smooth, with spicy notes reminiscent of gingerbread and fir honey.
Excellent when paired with delicate fish such as sea bass and sole or white meats in a creamy sauce.
