How is it made
The Chardonnay grapes are gently pressed in the cellar to obtain pure musts. Fermentation occurs in both steel and wood to combine aromatic clarity with palate volume. The colour is a brilliant straw yellow with greenish highlights and fine, persistent bubbles. The nose expresses white flowers and citrus, then creamy notes, peach and roasted pineapple, with delicate toasted nuances from the wood and prolonged lees aging. The palate is vertical, savoury and remarkably fresh, with citrus accents, a touch of ginger, and a long, harmonious finish marked by precision and minerality.

This Champagne pairs naturally with seared scallops, shellfish, and delicately flavoured fish thanks to its dryness and citrus-driven freshness that cleanses the palate. Ideal with oysters, amberjack carpaccio or tuna tartare, and light dishes based on butter or citrus. In French cuisine, it is well suited to sole meunière, while its pronounced minerality also complements sushi and sashimi.
