Description
Léon Launois Bio-Organic Champagne is a cuvée made from grapes sourced from the Montagne de Reims, the result of careful organic selection. The blend is composed of Meunier, Pinot Noir and Chardonnay, a combination that enhances the balance and elegance typical of the region. This champagne is born from an environmentally friendly approach and aims to best express the purity of the terroir.
The harvest is done by hand, followed by a gentle, low-pressure pressing lasting several hours. Vinification takes place in temperature-controlled stainless steel tanks, with the aim of preserving the primary aromas of the grapes. The wine then matures in traditional cellars, in the dark and at a constant temperature of 12°C, for a period ranging from 24 to 36 months.
In the glass, it shows a golden yellow color and a persistent mousse, accompanied by a fine perlage. The bouquet is rich, intense and complex, with delicate notes of pastry, apple, and a hint of floral. On the palate, it reveals flavors of white and stone fruits, with a pleasant nuance of sweet bakery notes, in a balanced and refined whole.
Perfect paired with refined dishes such as stuffed poultry fillet with foie gras, roasted quail, or lobster ravioli with fine herbs.
