Description
The Bleu Brut from Besserat de Bellefon is an elegant and distinctive Champagne, resulting from a selection of grapes from the finest villages of the Champagne region, including Avize, Mesnil-sur-Oger, Louvois, Bisseuil, Vertus, Mareuil-sur-Aÿ, Grauves, and Cumières. The cuvée is composed of Pinot Meunier, Chardonnay, and Pinot Noir, representing a perfect balance between freshness, structure, and finesse.
The winemaking is distinguished by the reduced use of liqueur de tirage, a technique that allows for the formation of a lighter and creamier mousse, creating a delicate and persistent effervescence. The absence of malolactic fermentation helps preserve the wine's freshness and tension. Thirty percent of the reserve wines come from a Solera system, while the aging process occurs over three years on the lees, followed by at least six months of rest after disgorgement.
In appearance, it presents with golden copper reflections and a bright shine. On the nose, it reveals a rich and expansive bouquet with notes of lime blossom, honeysuckle, hazelnut, and mirabelle plum. On the palate, it is harmonious and well-balanced, with a vinous vein that gives structure and depth while maintaining great mineral elegance.
Ideal when paired with smoked duck breast and onion confit speculoos or with yuzu-scented sardines.
