The Champagne Brut Tradition Collection Classique by Sophie Bouchet is crafted in Champagne from Pinot Meunier and Pinot Noir grapes cultivated between the Vallée de l'Ardre and the Montagne de Reims. It reveals a fresh and approachable style, offering a balanced structure and crisp minerality. Bottle re-fermentation using the Traditional Method and aging on lees provide an elegant perlage and notable finesse both on the nose and palate.

Where it comes from

The grapes are sourced from crus between the Vallée de l'Ardre and the Montagne de Reims, on limestone slopes rich in fossils. The continental climate with significant temperature swings highlights the fresh notes and preserves acidity, while the light soils provide distinct savoriness. Vineyards with southeast exposure and good ventilation ensure balanced ripening and help reduce vine disease pressure.

How it is produced

The grapes are hand-harvested in boxes to preserve bunch integrity. They are gently pressed, and the free-run must ferments in stainless steel at controlled temperature. After tirage and liqueur de tirage, the second fermentation in bottle takes place according to the Traditional Method, followed by at least 36 months aging on lees. Disgorgement is performed without dosage, and the wine rests for several months before release.
