Where it comes from
The grapes are sourced from crus between the Vallée de l'Ardre and the Montagne de Reims, on limestone slopes rich in fossils. Vineyards with southeast exposure and good ventilation ensure balanced ripening and help reduce vine disease pressure.
How it is produced
The grapes are hand-harvested in boxes to preserve bunch integrity. They are gently pressed, and the free-run must ferments in stainless steel at controlled temperature. After tirage and liqueur de tirage, the second fermentation in bottle takes place according to the Traditional Method, followed by at least 36 months aging on lees. Disgorgement is performed without dosage, and the wine rests for several months before release.
