Description

Ayala Champagne Brut Millésimé Cuvée Perle d'Ayala comes from vineyards located in Aÿ, in the Marne, in the heart of the Champagne-Ardenne region. This bubble is produced in limited quantities, only in exceptional years.

It is mainly obtained from Chardonnay and Pinot Noir grapes, harvested and selected only by hand. After the classic winemaking processes, the sparkling process takes place by refermentation in the bottle, according to the champenoise method, where this bubbles remains to refine for at least 8 years, before being placed on the market.

Champagne Perle d'Ayala is characterized by a straw yellow color, with shiny golden reflections, and a fine and elegant perlage. The nose opens with crisp Mirabelle plum aromas, enriched with refined notes of marzipan and vanilla, with slight hints of butter. On the palate it is opulent and velvety, dominated by notes of custard and dried fruit, with a pleasantly long and persistent finish.

Perfect to accompany noble and refined dishes, it is ideal in combination with foie gras, braised veal and chicken with mushrooms.
