Description

B16 is a Champagne produced by the historic Bollinger maison in the Aÿ region of Champagne. It is born from a blend of Pinot Noir and Chardonnay grapes selected from Grand Cru and Premier Cru vineyards located in the latest ripening areas of the Montagne de Reims, including Bouzy, Trépail, Verzenay, Verzy, and Tauxières. This wine elegantly expresses the distinctive character of the region and the maison's refined style.

Vinification takes place entirely in barrels, a choice that gives the wine structure and complexity, followed by tirage with cork closure. The dosage is Extra Brut, with a low sugar level that enhances purity and precision. The wine spends an extended period aging on the lees, with manual remuage and disgorgement contributing to its depth and finesse.

In the glass, it presents a luminous color with golden reflections. The bouquet is fine and complex, displaying delicate floral notes intertwined with hawthorn and acacia honey scents, complemented by hints of white-fleshed fruit and bergamot. Accents of ripe fruit, sweet almond, and yellow fruits later emerge. On the palate, it stands out for its silky and ethereal texture, with an elegant balance and a persistent, delicate finish.

It pairs harmoniously with refined dishes such as shellfish, steamed fish, herbed cheese, and fresh fruit-based desserts.
