Description
The Champagne Extra Brut by Besserat de Bellefon is bold and refined, crafted from carefully selected grapes from the villages of Mesnil-sur-Oger, Mareuil, Bisseuil, Mailly, and Rilly-la-Montagne, at the heart of Champagne. The blend consists of Pinot Noir and Chardonnay, offering a cuvée that combines power and freshness with complex and profoundly elegant notes.
This Champagne is produced according to the traditional method of the maison, which involves a reduced addition of liqueur de tirage to achieve a lighter and creamier mousse. The absence of malolactic fermentation helps maintain the intact taste tension, while the long maturation of eight years on the lees, followed by at least two more years after disgorgement, gives the wine a mature structure and great aromatic depth.
In appearance, it presents a deep yellow color with matte golden reflections. The nose is initially reserved but then opens to opulent hints of dried fruit, macadamia nuts, currants, and smoky and toasted notes. On the palate, it reveals an enveloping complexity with references to pastry, a smooth structure, and a lingering finish that leaves a mark.
It elegantly pairs with seafood dishes such as cod tartare with citrus and pink pepper or crab terrines with curry cream.
