Les 7 by Laherte Frères is the Extra Brut Champagne born from the union of seven historic grape varieties: Fromenteau, Arbanne, Pinot Noir, Chardonnay, Pinot Blanc, Pinot Meunier, and Petit Meslier. Its complex identity comes from a structured process that uses a method similar to solera for managing reserves. The elaboration strictly follows the Traditional Method, with bottle fermentation and a long aging on the lees. This approach gives its taste profile a distinct minerality, emphasizing the energetic tension and dryness typical of its style.
Where it comes from
It takes shape in the area of Chavot, within the renowned Champagne region, where Laherte Frères has recovered a significant historic ampelographic heritage. The vines put down roots in calcareous-clay soils rich in pebbles, key elements that ensure the deep mineral mark in the glass. The decision to grow these seven varieties together in the same area faithfully conveys the richness of the local terroir, just as it was more than two centuries ago. Its geographical identity is reflected in a persistent taste tension, consistent with its dry classification.
How it's produced
Grapes are hand-harvested at perfect ripeness, followed by gentle pressing, fully respecting the vineyard ecosystem thanks to biodynamic principles. The alcoholic fermentation starts spontaneously in barrels, where the wine also undergoes malolactic fermentation to stabilize its structure. The process continues according to the Traditional Method with bottle fermentation, complemented by a reserve management where about half the blend is renewed each year with the latest harvest. The extended aging on fine lees and manual disgorgement complete a meticulous production cycle.
Tasting notes
In the glass it shows a bright straw yellow color, visually anticipating the precision of the palate. On the nose it develops a clear citrus component, enriched by hints of fresh fruit, delicate floral perceptions, and subtle earthy nuances, direct expression of its complex blend of seven grape varieties. The palate is immediate and energetic, guided by incisive savoriness and prominent minerality. Its linear progression on the palate leads to a long and clean finish, able to leave a pleasant saline trace that highlights the effective interplay with the lees.

Its high flavor definition makes it an ideal companion for enhancing the flavors of the sea, perfectly matching fish soups, rich seafood fries, and fresh tartares. The pronounced dryness of the Extra Brut cleanses the palate and is perfect to balance the intensity of a seafood platter. In international cuisine, it pairs successfully with sole meunière, thanks to its vibrant acidity which contrasts richer preparations.
