Champagne Extra Brut Grand Cru AOC Les Lumières 2008 Doyard
Description
Champagne Les Lumières is produced by the Doyard winery, the Récoltant-Manipulant maison founded by Maurice Doyard in 1927. Today the company treats 10 hectares of vineyards in Vertus and in Gran Cru villages such as Le Mesnil-sur-Oger, Cramant, Oger, Avize and Aÿ, under organic farming. All the company's cuvèe age on the lees for a minimum of 48 months.
The wine is a blend of 2/3 of Chardonnay from the Mesnil-sur-Oger and Avize vineyards and 1/3 of Pinot Noir from the vineyards in Ay. The musts are all vinified in 5-year oak barrels, without the malolactic fermentation. Champagne ages on the lees for at least 96 months. Only 700 bottles of this Champagne are produced.
In the glass the wine appears golden in color with an intense and persistent perlage. The nose is complex and opens on aromas of orange oil, fragrant yellow fruit, fresh pastries, beeswax and almond paste. The sip is full-bodied, concentrated and deep, with a lively acidity backbone and a very long finish.
A Champagne to be enjoyed on special occasions, also ideal to accompany oysters and steamed shellfish classically.
