Description
The Pinot Noir TX20 from Bollinger is a Champagne produced exclusively from Pinot Noir grapes sourced from vineyards located in Tauxières, Aÿ, Avenay, and other selected villages in the Champagne region. This label fully expresses the philosophy of Maison Bollinger, which is strongly connected to the region and the identity of the grape variety, particularly those grown in the Grands and Premiers Crus of the historic commune of Aÿ.
The winemaking process involves the exclusive use of the cuvée, with a significant percentage of reserve wines (52%) and the rest composed of wine from the current harvest. The oldest wines date back to 2008 and 2012. The aging in the cellar is extended for twice as long as required by the denomination, and the final dosage is in the Brut style.
The color is bright golden yellow, while on the nose, there are fresh citrus aromas of lemon, peach, and quince, accompanied by elegant mineral notes. On the palate, it opens with notes of red currant and a subtle acidity, developing depth, vinosity, and fruity complexity that finishes with a long persistence.
Ideal to pair with lobster armoricaine, roasted guinea fowl, or truffle pecorino with seeded bread.
