Description
The Champagne Rosé Brut by Besserat de Bellefon is refined and sensual, obtained from a blend of Pinot Meunier, Chardonnay, and Pinot Noir. The grapes come from around 40 crus in Champagne, including three Grand Cru such as Avize, Mesnil-sur-Oger, and Louvois, and five Premier Cru including Bisseuil, Vertus, and Cumières. The cuvée also includes 11% of red wines from Bouzy, Les Riceys, and Vincelles.
The winemaking follows the traditional method of the maison, characterized by a lower addition of liqueur de tirage, which allows for a finer and more delicate formation of bubbles. This process, combined with the absence of malolactic fermentation, preserves freshness and vibrancy. The wine ages for at least three years on the lees, followed by a further minimum rest of six months after disgorgement, giving depth and complexity.
In appearance, it has a pale pink color with fine and clear bubbles. The bouquet expresses intense aromas of red fruits and hawthorn, with a spring-like energy that enhances its vivacity. On the palate, it is bright and alluring, with notes of wild strawberry and a soft, fresh texture that gently envelops.
Perfectly paired with foie gras and gingerbread skewers, but also with roasted prawns in orange and pomegranate juice or seared Breton langoustines.
