Description
This Brut Vintage Champagne is produced by the historic Maison Piper-Heidsieck, founded in 1785 and renowned for its ability to select and blend exceptional wines. The cuvée is composed of Pinot Noir and Chardonnay, primarily from villages classified as Grands and Premiers Crus. The Maison's approach combines tradition and innovation, ensuring a distinctive style thanks to the work of Chef de Caves Emilien Boutillat.
The grapes are hand-harvested at full maturity and slowly pressed near the vineyards, with juice separation. After static clarification, alcoholic fermentation takes place in thermo-regulated stainless steel tanks, with selected yeasts. Malolactic fermentation is completed, and sustainable oenology limits the use of treatments, including sulfites. The wine is vinified exclusively from cuvée, sourced from 19 crus, 87% of which are classified as Grands and Premiers Crus, and is aged for at least 5 years on the lees and 12 months after disgorging.
Visually, it is elegant and luminous. On the nose, there are aromas of orange blossom, apricot, brioche, and toasted almond. The palate is intense and well-balanced, with citrusy notes of mandarin and lime zest, accompanied by hints of licorice. The structure is full, supported by lively freshness and a long aromatic persistence.
It pairs perfectly with refined dishes with intense flavors such as mushroom risotto with aged Parmesan or cromesquis of Reims ham and foie gras.
