Description
What kind of wine is it?
Chassagne-Montrachet Premier Cru Les Caillerets by Domaine Amiot Guy et Fils is a white Burgundy wine made from Chardonnay. The vinification follows traditional methods and, after fermentation, the wine is aged for about 18 months in French oak barriques. The result is a style that offers freshness and vibrancy combined with defined structure, a mineral imprint, and a balanced aromatic complexity.
Where does it come from?
It originates in Burgundy, France, in the Chassagne-Montrachet Premier Cru area, in the Les Caillerets parcel. The grapes come from a 0.66-hectare plot with a southeast exposure on a steep slope. The clay-limestone soil contributes to the mineral profile, while vines around 70 years old provide intensity and depth to the palate.
How is it made?
The production is designed to respect the characteristics of the place of origin. After harvesting the Chardonnay, fermentation defines the aromatic base and balance of the wine. This is followed by about 18 months of aging in French oak barriques, which fosters complexity development and strengthens the structure, while maintaining freshness and vibrancy and allowing a clear mineral trace to emerge.
Tasting notes
Pale yellow with bright reflections. The nose is rich and intense, with aromas of ripe fruit, exotic accents, and a floral component, supported by a mineral undertone. The palate is broad and smooth, with an orderly progression and a finish marked by well-perceived freshness.
What does it pair with?
On the table, it naturally accompanies first and second courses of fish, where the savoriness of the dishes goes hand in hand with the wine’s minerality. It also pairs well with white meat main courses, thanks to a structure that supports fuller textures without losing its drive. It matches well with recipes featuring creamy elements, balanced by its freshness.
When to serve it
It is suitable when you want a precise white, ideal throughout the meal from starter to main course if the menu is based on fish or white meats. The balance of breadth, minerality, and vibrancy makes it enjoyable for both important occasions and refined dinners. Its barrel aging and structure also invite consideration for cellaring, to appreciate its aromatic evolution over time.
