Description
The Bonus Passus is a red wine obtained from Grenache Noir and Mourvèdre grapes grown according to organic farming methods in the famous vineyards surrounding the village of Châteauneuf-du-Pape, on sandy soils rich in sandstone, facing south and southeast, in the French region of Vaucluse, located in the heart of the Rhône Valley, near Avignon, from the Bonpas estate. Its name derives from “Bon passage,” referring to the safe crossing of the Durance River which once connected Rome to Avignon.
The winemaking process follows the traditional Rhône Valley method to best enhance the characteristics of the individual grape varieties. During fermentation, pumping over and racking techniques are used for delicate extractions, while the pomace is immersed in the warm must, in a sort of infusion that softens the tannins and improves the wine’s roundness. Maceration lasts three weeks and 15% of the cuvée ages for eight months in French oak barrels.
It presents with garnet red color and violet reflections. The bouquet is delicate, with small fruits and notes of red fruit and cherry compote. On the palate, it shows a silky texture with flavors of ripe stone fruits like plum and black cherry, enriched with spicy nuances, for a remarkable aromatic complexity and a persistent finish.
Ideal pairing with garlic lamb, duck, or flavorful vegetarian dishes.
