Description
What kind of wine it is
Chianti Classico Clemente VII by Castelli del Grevepesa is a red wine made from Sangiovese grapes grown in the heart of the Chianti Classico area. It shows balanced structure and a complex profile, with medium-full body and ripe tannins that support longevity. The winemaking process involves temperature-controlled fermentation and 24 months of maturation in barrels, followed by a period in the bottle which defines its classic and long-lasting character.
Where it comes from
The Sangiovese grapes come from the vineyards of Castelli del Grevepesa near Greve in Chianti, in the province of Florence. The temperate climate with significant temperature fluctuations promotes aromatic development, contributing to the wine’s elegance and freshness.
How it's made
The hand harvest in crates protects the integrity of the bunches. After careful selection, the grapes are destemmed and fermented at a controlled temperature for ten days. Extended maceration extracts color and tannins, then 24 months aging in barriques completes maturation. The wine rests for at least 3 months in the bottle, reaching a mature and harmonious aromatic profile.
Tasting notes
In the glass, Chianti Classico Clemente VII shows a deep ruby red with garnet highlights. The nose offers aromas of wild berries and pleasant spicy notes of vanilla. On the palate, it is velvety, with soft tannins and balanced acidity, providing freshness and a long-lasting finish.
Food pairings
This wine pairs beautifully with red meats, roasts and game. Its structure and spicy notes also make it suitable for aged cheeses and traditional Tuscan dishes.
Serving suggestions
Chianti Classico Clemente VII can be enjoyed both young and after moderate bottle ageing. We recommend serving it in glasses suitable for structured red wines, to enhance its aromatic profile and structure.
