Description

The Chianti Classico Gran Selezione Paronza is the result of a rigorous selection of Sangiovese grapes from the historical vineyard “Paronza,” situated on the homonymous hill in Castellina in Chianti and owned by the winery Casale dello Sparviero. It is a wine of rare elegance, structure, and personality, with an extraordinary ability to evolve that enhances its depth and complexity.

The vinification includes 15 days of fermentation on the skins in cement tanks at a controlled temperature, followed by 5 days of post-fermentation maceration. The aging process includes 18 months in French oak barrels, 6 months in Slavonian oak casks, and at least 1 year in the bottle.

Visually, it presents a ruby red color enriched by intense garnet reflections. The aromatic profile is dominated by hints of cherry and vanilla, while on the palate, it is powerful, dry, and tannic, with a long finish that reveals notes of blackberry and sweet tobacco.

It pairs magnificently with structured dishes of red meat or game and long-aged cheeses.
