Chianti Classico Gran Selezione Paronza by Casale dello Sparviero is a red wine made from Sangiovese grapes grown on the Paronza hill in Castellina in Chianti. It stands out for its structured and complex style, with a full body and well-integrated tannins, suitable for long aging. Vinification takes place in temperature-controlled cement vats. This is followed by an 18-month maturation in French oak barriques, 6 months in Slavonian oak barrels, and at least a year in bottle.

Where does it come from

The grapes come from the historic Paronza vineyard in the Castellina in Chianti area, at the heart of Chianti Classico. The local conditions encourage balanced ripening of the grapes, helping to express the territory’s characteristics. These conditions create an equilibrium between freshness and phenolic maturity and give the wine both structure and a strong sense of place.

How is it made

The Sangiovese grapes are carefully selected from the historic Paronza vineyard. Fermentation takes place in temperature-controlled cement vats for about fifteen days, with gentle maceration on the skins, followed by an additional five days of post-fermentation maceration. Maturation continues with 18 months in French oak barriques, 6 months in Slavonian oak barrels, and at least twelve months in bottle. This process develops complex aromas and a well-balanced structure.

Visually, it shows a deep ruby red color. The bouquet offers ripe red fruit notes and subtle spicy hints from the wood aging. On the palate, it is full and enveloping, with sturdy yet well-integrated tannins, good acidity, and a persistent finish.
