Description
Prunaio is Viticcio's ultimate expression of quality in Chianti Classico, produced exclusively from Sangiovese Grosso grapes selected through massal selection. Originally launched as a Supertuscan in the late '70s, it is now a Gran Selezione in every respect. The two vineyards are located at altitudes of 300 and 430 meters, with southeast, east and west exposures, on soils rich in alberese and galestro. From planting, management has been inspired by biodynamic agricultural practices.
After manual harvesting, alcoholic fermentation takes place in stainless steel at 28-30°C with a maceration of 25 days, followed by malolactic fermentation in wood. Aging continues for 18 months in barrique and for an additional 12 months in large Slavonian oak casks.
It presents itself with a deep ruby red color. On the nose, refined aromas of ripe plum, iris, truffle, and graphite emerge. On the palate, it is fresh, mineral and concentrated, with evolving tannins that lead to a long finish consistent with the olfactory profile.
Elegantly accompanies braised meats, roast game, dishes based on mushrooms or truffle, and aged cheeses of great character.
