Description
Dievole's Chianti Classico is born in the vineyards located in the municipality of Castelnuovo Berardenga, in the province of Siena.
It is produced with pure Sangiovese grapes, harvested in early October. Fermentation is spontaneous and takes place with the use of indigenous yeasts in Slavonian oak vats for 12-13 days. After malolactic fermentation, it ages in large unroasted French Allier oak barrels for about 14 months, and then it ages in bottle for another 3 months before being released on the market.
Dievole's Chianti Classico has a lively ruby red color. The nose opens with intense aromas of berries and cherry, enriched with floral notes of violets. On the palate it is a fresh and balanced wine between acidity and tannins, harmonious and closes with a pleasant and persistent finish.
To be tasted immediately or over 5 years, this wine is perfect to accompany cheeses, pastas with traditional sauces, grilled meats.
