Chianti Classico DOCG Riserva 2007 Castello di Cacchiano
Description
The Chianti Classico Riserva of Castello di Cacchiano was born in vineyards located in the municipality of Gaiole in Chianti, on top of a gentle hill in the heart of the green Chianti hills.
It is mainly produced with Sangiovese and Canaiolo, Malvasia Nera and Colorino grapes, harvested only by hand during the first weeks of October. Fermentation takes place in stainless steel tanks at a controlled temperature of 30-31 ° C for 15 days. Subsequently the wine ages in barrique for 36 months before being bottled.
It is characterized by a ruby red color. The nose opens with fruity hints of plum, cherry and raspberry, enriched with pleasant spicy notes of licorice and leather. On the palate it is fresh, pleasantly soft and persistent.
Perfect to accompany dishes with meat sauce and mushrooms, it is ideal in combination with risotto, stewed meat and roasts.
