Description

The Sauvignon from Tenuta Villanova is a white wine produced exclusively from Sauvignon grapes cultivated in the vineyards of the Collio area in Friuli Venezia Giulia. The Eocene-origin soils consist of marl-sandstone flysch, locally known as "ponca," an ideal substrate for quality viticulture. The harvest is carried out strictly by hand.

The vinification involves aging 90% in stainless steel and the remaining 10% in oak tonneaux, with bâtonnage for six months. This approach allows maintaining the characteristic aromatic freshness of Sauvignon, enriching it with structure and depth.

The wine appears yellow with slight greenish reflections. The olfactory profile is broad and complex, with floral and vegetal aromas that continuously evolve, including hints of mint and elderflower. On the palate, it is full, savory, and fragrant, with a good balance between intensity and freshness.

It pairs perfectly with asparagus, vegetable veloutés, risottos, roast fish, and slightly spiced dishes.
