What kind of wine is it?
Côtes de Provence BY.OTT by Domaines Ott is a Provençal rosé made from a blend of Grenache, Cinsault, and Syrah. It offers a fresh , elegant , and easy-to-read style, with evident flavors and a clean fruit profile. The exclusive stainless steel vinification enhances aromatic precision and flavor tension, without the influence of oak. This rosé is suitable as an aperitif or at the table, offering a balance between fragrance and structure.
Where does it come from?
It originates from the Côtes de Provence appellation, in the heart of Provence, in southeastern France. The vineyards extend across hills and coastal plains, on soils of marl , clay , and limestone, with stretches of sand and pebbles. The Mediterranean climate, defined by light and constant ventilation, favors acidity and clean aromas. The Provençal origin is reflected in the pale color, fine aromas, and crisp, fresh palate.
How it is produced
The grapes are harvested to preserve their aromatic integrity and acidity, then gently pressed. Fermentation takes place in stainless steel at a controlled temperature, limiting oxidation and enhancing the primary aromas. The brief maceration on the skins, typical of Provençal rosés, imparts delicate hues and light tannins. Aging continues in stainless steel, with a possible lingering on the lees for greater roundness and persistence, before bottling.
Tasting notes
On the nose, a clean and layered profile, with notes of peach, apricot, citrus, and peach blossom, enriched with a light spice. It appears pale and bright pink, with clarity and a fine texture. On the palate, the attack is fresh, while the mid-palate remains linear and flavorful, with crisp fruit and a saline sensation that supports the drinkability. The finish is dry and precise, with citrus lingering notes and a subtle spicy texture.
What does it pair with?
It pairs well with delicate appetizers , vegetable dishes, fish, and white meats, where its freshness cleanses the palate and its savory flavor enhances light sauces. Excellent with seafood or herb risottos, and with citrus-marinated fish tartare. Locally, it pairs well with a balanced salade niçoise or a delicate bouillabaisse, enhancing the flavors without overpowering the iodine. It also pairs well with fresh cheeses and simple Mediterranean cuisine.
When to serve it
A rosé ideal for social occasions, from aperitifs to meals, when lightness and aromatic precision are sought. Serve chilled between 10 and 12°C, in a medium-sized glass to enhance the fruit and floral aromas. Perfect in warm weather and with fish-based dinners, it remains versatile year-round with delicate dishes. Aging in stainless steel enhances the aroma and offers its best in its first few years. It can evolve for a short time with balance and cleanliness.
