Description
The Crémant de Limoux Brut Château Martinolles originates from an area rich in history and tradition, near the abbey of Saint-Hilaire, where the first sparkling wines were created in 1531. Located along the Martinollet stream, the vineyard stretches among the Mediterranean scrub, olive groves, and rows of vines, in a natural setting of great beauty. The terroir, characterized by a Mediterranean climate with oceanic influence and clay-limestone soils, enhances the expressiveness of the varieties used: Chardonnay, Chenin, Pinot Noir, and Mauzac.
The winemaking process follows the traditional method, with gentle pressing of whole clusters and fermentation at controlled temperature. After an initial fermentation in vats, the wine undergoes a second fermentation in bottle, followed by a minimum aging of 15 months on the lees in air-conditioned cellars. Three months before marketing, disgorgement takes place, with the addition of the liqueur d’expédition.
Pale and clear yellow in color, it exhibits fine, dancing, and persistent bubbles. The nose reveals intense aromas of honey and acacia, accompanied by delicate crystallized citrus notes. The palate unveils a harmonious profile of citrus fruits, well-balanced between sugar and acidity, with a long and pleasant finish.
Ideal as an aperitif or paired with fish dishes for a refined gastronomic experience.
