Description
The Crémant de Limoux Rosé Brut by Vergnes is an elegant sparkling wine produced in the heart of the Limoux region, in Occitania. Coming from the Domaine de Martinolles, a historic estate nestled among the vineyards and hills of the area, this wine reflects the unique microclimate of the territory, influenced both by the Mediterranean and the Atlantic. The combination of clay-limestone soils and an altitude between 150 and 200 meters favors an optimal ripening of the grapes, cultivated according to environmentally friendly practices.
The winemaking follows the traditional method with pressing of whole clusters using a pneumatic press, followed by cold clarification and temperature-controlled fermentation. After the first fermentation in tanks, the wine is bottled to initiate the second fermentation. The subsequent aging occurs for at least 15 months on the lees in climate-controlled cellars, with disgorgement performed three months before commercialization and the addition of the liqueur d’expédition.
It appears with a delicate pink color with raspberry reflections and fine, persistent bubbles. On the nose, floral aromas and candied fruit stand out, with hints of honeysuckle blending with notes of peach and apricot. On the palate, it is smooth and lively, with a creamy mousse and refreshing accents of pink grapefruit and blood orange.
It pairs ideally with sushi, smoked salmon, red tuna tartare, fresh goat cheeses, Parma ham, and fish dishes.
